Rosella Pop

Taste Profile: FLORAL, SOUR, SPARKLING


Rosella Pop is inspired by Bali’s vibrant botanicals and the quiet ritual of evening refreshment. At its heart lies rosella, a flower long cherished across the archipelago for its bright acidity and deep crimson hue, a natural expression of both beauty and vitality.

 

We pair vodka with Flock’s house rosella kombucha, allowing natural fermentation to bring gentle sparkle and layered tang. A touch of tartaric acid sharpens the structure, while ginger torch (kecombrang) — a distinctive Balinese blossom — adds floral aromatics and a subtle wild spice that lingers softly on the palate.

 

Rosella Pop is our tribute to Bali’s garden: bold in color, rooted in tradition, and meant to be sipped slowly.
 

Love & Heat

Taste Profile: SWEET-SPICY, LOCAL AROMATICS, HINTS OF SMOKE


In Bali, fire is not only for warmth, it is for ceremony. It transforms, purifies, and symbol of the strength of the gods. Love & Heat draws from that spirit.

 

The smoky depth of mezcal mirrors the sacred flame, while nutmeg recalls the spice routes that once shaped the islands. Lacto-fermented jalapeño brings a living warmth, balanced by bright lime and fragrant lemongrass salt, ingredients that feel at home in Bali’s gardens.

 

Sweet-spicy, and softly smoldering, it is a quiet tribute to the island’s spirit, lifted by ritual, and meant to be savored slowly under the moon.
 

Jatayu Jolt

Taste Profile: SWEET-SPICY, JAMU-LIKE, HERBACEOUS

 

In Indonesia, jamu is more than a drink — it is a ritual passed through generations, a quiet act of care prepared with roots, herbs, and patience. It carries the warmth of ginger, the sweetness of honey, and the belief that what we consume should nourish both body and spirit.

 

This creation draws from that heritage. Ginger and honey form its heart, echoing the comforting heat of traditional jamu, while lemon lifts the blend with clarity. Braulio amaro and blended Scotch add depth and contemplation. A touch of thyme lingers like fresh leaves crushed between the hands.

 

Sweet, spicy, and herbaceous, it is a modern reflection of jamu — not medicinal, but mindful. A glass that honors tradition while inviting slow conversation under the quiet Ubud.

Dirty Mar-Tea-Ni

Dirty Mar-Tea-Ni is our meditation on umami — the quiet fifth taste that lingers rather than announces itself.

 

At first sip, it feels familiar, structured like a Martini, clean and poised. Yet beneath the surface unfolds oolong’s quiet tannin, the savory resonance of kombu and bonito dashi, and the subtle precision of saline. It is not sweetness that defines it, but umami — the taste that lingers in silence.
